Chicken Caesar Pasta

Pasta salads are enjoyable and super easy. Who doesn't love mixing all ingredients into one dish. This is perfect for a pool day, lake day, or a nice picnic with your husband. You can make a lot of this dish for a larger gathering or to keep leftovers in the fridge which you will want to do. I grew up on pasta salads as my father use to sell Ken's salad dressing for years and now he sell's Barilla pasta. He still is the master at coming up with recipes though for pasta salads. These types of dishes run in my veins so I hope you enjoy this one!

  • Ingredients

  • 1 box of Barilla Rotini (best pasta out there)

  • 3 roma tomatoes

  • 1 point of chicken tenderloins

  • 1 tsp of Italian seasoning

  • 1 bottle of Ken's Creamy Caesar

  • 1 bag of sweet butter lettuce mix

  • 1 cup of Parmesan cheese

  • 1 cup of croutons

  • 1 lemon

  • salt/ pepper

Step by Step

  1. Get out a pot and boil some water for your pasta.

  2. While that is getting to a boil. Cut up your chicken tenderloins into small pieces. I season these with a little bit of salt pepper oil olive and 1 teaspoon of Italian seasoning. Take out a skillet get nice and hot and put your chicken in and cook till all the way done. Once done put into large bowl and then place in fridge.

  3. Your pasta should be done also. (Trick: remember do not rinse with water as it takes about the starch of the pasta. Drain water and toss in olive oil.) Pour pasta into the same bowl as chicken.

  4. Needs to refrigerate for 2 hours.

  5. Once your pasta and chicken is nice and cold cut up your roma tomatoes.

  6. Put tomatoes and bag of sweet butter lettuce, Parmesan cheese, a squeeze of lemon, and salt and pepper for taste.

  7. Pour in half of your salad dressing and mix all ingredients. If that's not enough dressing for your liking you can add more.

  8. Add a couple of croutons to the top (I made these homemade). Get out a large spoon, some bowls, and Enjoy!
