BLT Lettuce Wrap

You can never go wrong with a good wrap. I like to play around with these for lunch because you can experiment so many ingredients. I am a little different when it comes to lunch. I don’t really like to eat a very heavy lunch if I had a big breakfast that day. A great alternative for your wrap is replacing it will a hardy piece of lettuce. It’s nice to take away carbs sometimes from your diet. The benefits of doing a low carb meal or over all diet can be rewarding at times. Meaning, eating low-carb meals can lead to an automatic reduction in lowering appetite. People restricting their carbs sometimes lose 2–3 times as much weight — without being hungry. With this recipe you will notice that after you eat you will be full but not that guilty full. This meal is one of easier lunch choice to make if you go into the office everyday. You can pre make the night before and once you get to the office you can set into the fridge until lunchtime. This is one of my favorite lunches and snacks to make. Give it a try!

Ingredients

  • Romaine Lettuce (you could also use butter lettuce

  • Crispy bacon

  • Cherry tomatoes

  • Red Cabbage

  • Red Onion

  • Lemon

  • Mayo

Step by Step

1. Get all your ingredients out on the counter.

2. You will need a pan (large enough to fit your bacon) and turn temperature to a medium heat. You want your bacon to be crispy but not over cooked. Once pan gets warm you can put your stripes of bacon in. (Trick: a way to check if your bacon is done, lift it up in the middle with a fork. You want the piece of bacon to fold over the fork but don’t want it to touch end to end).

3. As you are cooking your bacon go ahead and rinse off your romaine lettuce and spread a small amount of mayo on the lettuce (this is optional).

4. Next you are going to cut your vegetables. Red onions can be cut in thin circles or diced. Cut your cherry tomatoes in half. The red cabbage you want to cut very thin.

5. Your bacon should be done by now. Make sure you place the bacon on a paper towel to drain the grease off.

6. Time to assemble. Take your lettuce with mayo, put your red onions, bacon, cabbage, then your cherry tomatoes. Top it off with salt/pepper and a nice squeeze of lemon.

7. Plate up and Enjoy!
