Cauliflower Kielbasa Skillet


Another keto meal up on the blog. One thing I have noticed with all the keto meals I love is that they are super easy to make and made in under 30 minutes. It may look like there is a lot of different ingredients, but you probably already have most of them in your fridge or pantry. This meal is perfect for meal preps. I really do not like meal prepping as I do not like heated up food but this dish heats up nicely. Super easy and delicious.


Ingredients

  • 1 bag of cauliflower rice

  • 1/2 red bell pepper, diced

  • 1/2 yellow bell pepper, diced

  • 1/2 green bell pepper, diced

  • 1/2 onion, diced

  • 9 ounces smoked kielbasa, sliced (not ground sausage)

  • 3 tablespoons olive oil

  • 1/4 teaspoon red pepper flakes (optional)

  • 1/2 teaspoon of minced garlic

  • 1 teaspoon Cajun seasoning

  • 1 teaspoon of garlic salt

  • Salt and fresh cracked pepper

  • Fresh parsley, chopped

Step by Step

  1. Take your bag of cauliflower rice and follow the instructions on how to cook. (Trick: I buy the microwave bag one. It’s so easy and taste really good. Way less work than trying to make your own.)

  2. Heat a large skillet over medium-high with 1 tablespoon olive oil. Add kielbasa and cook until browned on both sides, about 5 minutes. (Trick: your sausage is already cooked so you are just getting sausage crispy and hot.)

  3. Remove from the skillet and set aside.

  4. In the same skillet add another 2 tablespoons olive oil & your butter. Dice up all your peppers and onion and add into pan. These need to cook for 4-5 minutes.

  5. Next, add garlic, Cajun seasoning, garlic salt, salt and pepper, cook for about 1 minute. 

  6. Now all ingredients are blended together stir in the cooked cauliflower rice and sausage until combined. Cook for another minute.

  7. Garnish with chopped parsley and serve immediately. Enjoy!
