Chicken Caesar Pasta Salad

This recipe is one of the perfect Summer get together with friends recipe. Plus it's super easy to throw together. When I go over to someone’s house for a cookout I feel like I must bring something even if they tell me not to. I love food as you can tell by now. I really love simple good food that doesn’t take much effort and I feel like this is one of those recipes. You will need to make this salad a couple of hours before you head to your cookout just so you give it enough time to chill.



Ingredients

1 box of Rotini Pasta (Barilla is by far the best brand out there)

1 pound of Chicken tenderloin

2 cups of Ken’s Creamy Caesar

¾ of a bag of sweet butter lettuce mix

4 roma tomatoes

1 cup shaved parmesan

½ of lemon juice

Salt and pepper

Homemade croutons

about 8 pieces of sour dough bread

2 tbsp olive oil

1 tbsp garlic salt seasoning


Step by Step

  1. Get out a large enough pot for the entire box of pasta. Add enough water to cover the top and a tbsp of salt to the pot. Turn to medium heat until it’s boiling. Take your box pasta and cook for desire time that is stated on the box. (Trick: you do not want to rinse your pasta once it’s done. You want to drain all pasta water and drizzle olive oil over the top, so pasta doesn’t stick together.)

  2. Cut your tenderloins into bite size pieces. Season with salt and pepper and put into a sautéed pan. Cook for about 10 minutes on medium heat (Trick: based on how big you cut your pieces) or until chicken is all the way cooked.

  3. Cut your tomatoes into the same size pieces as your chicken.

  4. Once your pasta and chicken are done its time to assemble your salad.

  5. Get out a large bowl (Trick: I like using a stainless-steel bowl as I think it helps get the salad colder faster.)

  6. Add in your pasta, dressing, lettuce mix (Trick: Rinse your lettuce before you adding to the bowl), grilled chicken, tomatoes, your shaved Parmesan, and a nice squeeze of lemon juice.

  7. Add salt and pepper for taste and mix all together.

  8. Place into fridge for 2 hours.

  9. While your pasta salad is cooling time to make your homemade croutons

  10. Cut your sour dough it's chucks. Add into a bowl and toss them in your olive oil and garlic seasoning.

  11. Turn oven to boil and spread your bread pieces onto a sheet pan.

  12. Place into oven for about 4 minutes. Toss bread chucks once timer goes off and put back in there for another 4 minutes. Watch this very closely as you don't want them to burn.

  13. Once done set aside.

  14. Before serving pasta salad sprinkle croutons over the top and Enjoy!!
