Cilantro Steak Tacos

Now who doesn't love a good taco. Get out a soft shell and throw whatever you have in the fridge and I promise it's going to turn out. You can be the worst cook ever but I don't know what it is but you can't mess up a taco. My husband and I always share 3 steak tacos when we go out for Mexican with rice and beans. I decided to give it a try myself. I actually made these Cinco de Mayo and I have to say best Cinco De Mayo food we have ever had! You definitely will have to give this a try and you wont be disappointed.






Ingredients

  • 1 pound flank steak (I got this one from Costco with a lime cilantro marinade already on it but it easy to make listed below.)

  • small soft flour tortillas

  • 1 box of goya yellow rice

  • 1 can of re fried beans

TOPPINGS

  • 1/2 red onion

  • 1 large tomato

  • 2 avocados

  • 2 jalapenos

  • fresh cilantro

  • fresco cheese

  • sour cream

  • salsa

  • cheese dip

Step by Step

  1. Take your flank steak and put on your grill. Cook 5-7 mins depending on how you like it cooked. (Trick: cooking flank steak can be tough to cook. It's very easy to overcook. You don't want this as the steak will become very tough.)

  2. While your flank steak is cooking follow the instructions on the box on how to cook your yellow rice.

  3. Take out a pot and pour re fried beans in. Turn to medium heat. Stir until they are hot.

  4. Now time to heat up your tortillas. Turn your oven to 350. Take out some tinfoil and paper towels. Lay a large piece of tinfoil on the counter. Place 3 tortillas on top. Then, get a couple of paper towels, get damp and place on top of those tortillas. Place another 3 tortillas on top and repeat till you get the desired amount. Wrap up tinfoil tightly and cook for 10 minutes.

  5. Next, cut up all your toppings into nice bite size pieces and crumble your fresco cheese.

  6. Don't forget to heat up your cheese dip!!! BEST PART

  7. Your flank steak should now be done. Take off grill and let rest for about 10 minutes. (Trick: Flank steak needs this so meat isn't tough.) After 10 minutes cut into strips.

  8. Now time to assemble your tacos, give yourself a nice helping of rice and beans, pour yourself a margarita and Enjoy!


Cilantro lime Marinade

  • 1/2 cup of fresh cilantro

  • 1/2 cup of canola oil

  • 1/4 cup of lime juice

  • 1 tbsp of sugar

  • 1 tbsp of fresh minced garlic

  • 1 tsp of fish sauce

  • salt/pepper
