Dish Baked Mediterranean Cod


I know I am not the only one who enjoys an easy dinner but still looks and TASTE like you took hours on cooking. This Dish Baked Mediterranean Cod is a quick and easy 20-minute hands-free dinner, loaded with veggies and perfect for the week days. Thursdays are definitely a hump day of cooking for Ben and I. We usually go out to eat because I had enough cooking and cleaning for the week but we are trying to do better. What I love about this dish it's so easy to make and you don't have to do much work. Like I said in my last post we are trying to add fish more into our diet. We love fish it's just hard to find good recipes sometimes. I am going to start cooking more in the Mediterranean diet area and this was a good start. A lot of people are scared of this diet because they aren't sure on how to cook fish. If you are a new bee I would start with Cod. Cod is a delicious flaky white fish, low in fat and a great source of protein. Cod is also extremely easy to cook and therefore a great choice for a weeknight meal, or if you don’t have a lot of cooking experience this is a great place to start. Let's get started.


Ingredients

  • 1 lb wild cod, cut into four pieces

  • 2 tbsp olive olive, Mediterranean

  • 2 whole roma tomatoes, halved long way

  • 1 whole white onion, quartered

  • 1 half leek, sliced, halved

  • 1 bag of spears asparagus (cut in half)

  • 1/2 cup pitted olives, whole, halved + chopped

  • 1 pinch himalayan salt

  • 1 pinch black pepper

  • 1/2 tsp red pepper flakes

  • 1/2 tsp oregano

Step by Step

  1. Pre-heat oven to 400F degrees. 

  2. In a large sheet pan lined with parchment pepper, arrange the cod and vegetables (tomatoes, onion, leeks, asparagus).

  3. Chop the olives into tiny pieces and spread over the fish and veggies for extra flavor.

  4. Generously season the cod and veggies with oil, oregano, red pepper flakes, salt and pepper to taste.

  5. Bake for 20-22 minutes uncovered. (Trick: if you like your veggies and fish alittle more cooked keep in for another 5 minutes)
