I know I am not the only one that has those really long days and last thing you want to do is cook dinner. Your husband just had the conversation with you that you guys need to do better about going out to eat and save money. I have those days a lot. Working in the mortgage industry you just have days that get so overwhelming and exhausting. Actually it's not just days it's sometimes weeks. They're honestly drain you. Any recipe that includes putting everything into a dish is perfect for days like this. This recipe you can't mess up. Cooked in 35 minutes so it's perfect for all you moms out there. You can serve with rice, tortillas, or cauliflower rice to make this dish a Keto friendly. I made it with the cauliflower rice and added a little bit of chopped cilantro and lime juice to add a little bit of favor. It was delicious. This meal is easy and definitely cost effective. Double recipe for larger families.
Ingredients (feeds 4 people)
1 pack of 2 chicken breast. (I have already cut mine in half)
1 pack of fajita seasoning
1 yellow and red pepper (I got this bag of variety small peppers from Costco used 2 of each color)
1 small yellow onion
1 jalapeno
a bundle of fresh cilantro
1/2 cup of Colby jack cheese
1/2 cup of Monterrey Jack
4 oz of cream cheese
Step by Step
Preheat oven to 400. Get out a 8x8 glass deep dish. Coat dish with olive oil.
Take your chicken breast and cut in half to make two thin chicken breast out of the one (Trick: I like doing this because I am not a big fan of a thick chicken breast. Kind of grosses me out and doing this gives a nice even cooking temperature though out the chicken).
Place cut chicken breasts into the oiled deep dish. Season with salt and pepper on both sides.
Take half of your shredded cheeses, all your cream cheese. and put into a microwave safe bowl. Heat up for 30 seconds.
Mix cheeses together until creamy. (Trick: if not melted enough add back into microwave for internals of 15 sec.)
Spread this mixture all over the top of the chicken breast.
Pour your fajita packet over the top.
Next, you are going to want to cut all your peppers and onion into nice thinly sliced stripes and place on top of the fajita seasoning. Add some salt and pepper over the peppers and onion.
Cut up your jalapeno and put as many as you want on top for some heat. (Trick: you don't have to do this if you don't like spicy food.)
Cook in oven for 20 minutes.
Once timer goes off. Take out and add the remaining shredded cheeses over the top.
Cook for another 5 minutes. (Trick: the cooking time is alittle tricky if you have a thicker chicken breast. You may need to keep in oven for another 5 minutes.)
Finely chop up your cilantro and sprinkle over the top of your fajita dish.
Serve with some sour cream and salsa, Enjoy!
