Gut friendly Chicken Pizza



I don't know what it is about pizza, but I swear you crave it when you just want to be lazy around the house. The downfall to that Papa John’s pizza you just ate, because you thought it would be a good idea and sounded so good, is your gut screaming at you, “Why did you just eat that!!!” I was tired of having that feeling and my husband sells pizza for a living and loves it so I had to come up with another way we could enjoy it. I found this amazing keto pizza dough recipe and decided made our own. Fun part about pizza night if can add what ever you want on top!


Ingredients

  • 1 ½ cups plus ¾ cup of shredded mozzarella cheese divided

  • 2 ounces cream cheese

  • 1 egg

  • ¾ cup almond flour

  • 6 strips bacon

  • ¼ cup ranch dressing

  • 1 rotisserie chicken

  • A handful of spinach

  • 1 small red onion

Step by Step

  1. Preheat the oven to 400 degrees.

  2. Get out a microwave safe bowl and pour 1 ½ cups of the shredded mozzarella cheese and cream cheese into it. Microwave on high for 30 seconds and then stir (TRICK: keep doing this in 15 sec increments until the cheeses are completely melted). Stir until smooth.

  3. Quickly stir in the egg and almond flour. Work the dough in the bowl with clean hands until it forms a ball. (Trick: The dough is going to be very sticky, I always add flour to my hands so it won’t stick as bad.)

  4. Line a baking sheet with parchment paper. Place the dough in the center and use your hands to press it into a circle, rectangle, or whatever the dough wants to do. It sometimes has a mind of itself. You need it to be approximately 9×13 inches.

  5. Bake the pizza crust at 400F for 8-10 minutes, or until it just begins to brown slightly around the edges. Remove from the oven and set aside to cool for 5 minutes.

  6. While your crust is cooking and cooling start cooking your bacon. Cut into bite size pieces and place into a small skillet. Once pieces are nice and crispy remove from grease and pan onto a small stack of paper towels to drain the grease.

  7. Reduce the oven temperature to 350F degrees.

  8. Cook the bacon in a skillet over medium heat until it reaches your desired crispness.

  9. Spread the ranch dressing (Trick: I make homemade ranch as I think it’s much better than the store bought stuff) evenly over the cooked pizza crust, leaving a small border of crust around the edges without the dressing.

  10. Take your Rotisserie chicken and start pulling it apart. (Trick: be very careful you aren’t getting any of the bones.) Then add over the top of the ranch

  11. Sprinkle the bacon over top of the chicken.

  12. Next, take your handful of spinach and arrange that all over the top with sliced red onion. (Trick: if you aren’t a veggies kind of person you don’t have to add these just skip this step.)

  13. Top the pizza with the remaining ¾ cup of shredded mozzarella cheese.

  14. Bake at 350F for 8 minutes, or until the cheese is melted.

  15. Once done take it out of the oven and cut into pieces and enjoy!
