Happy Mother's Day to all those hard working incredible women out there. Today is about showing your mother or someone you look up to as a mother how much you cherish them. One thing that can show someone how much you truly care about them is through FOOD! Food is away into anyone's heart. I came up with this recipe because it's easy, delish, and it's perfect for a warm summer day. We just had a new winery open next to us "Qualusi Vineyard" is Acworth Georgia. Wine is so good but the nice thing about this place you can bring your own little picnic as they do not serve food. For this mother's day bring out the picnic basket "or cooler" and take your mom out somewhere fun and just enjoy the day with her. It will mean more to her then you know and way over just giving her a gift. Again Happy Mother's everyone, Enjoy!
Ingredients
Rotisserie Chicken
4 Boiled eggs
1/2 cup of celery
1/2 cup dill pickle
half of a lemon
1 tbsp on fresh dill
1/4 cup of Dijon Mustard
1/2 cup of Mayo
salt and pepper
fresh croissants
Step by Step
1. Get out a pot, fill with water, get water boiling, and drop eggs into pot. Turn water to medium heat and let cook for 15 minutes.
2. Take you rotisserie chicken and start pulling apart and cutting into chucks and put into a large bowl for all your ingredients. (Trick: I add some of the skin to this for that extra salty taste.)
3. Clean your celery stocks and cut into bit size pieces, add to bowl.
4. Get your jar of pickles out and cut them the same size as your celery, add to bowl.
5. Your eggs should be done. Drain the water and let cool. (Trick: I stick mine in the freezer for about 15 minutes to cool faster. Eggs are easier to peel if they are cooled.)
6. Once eggs are cool peel and dice the whole egg and put into bowl.
7. Now time to add your wet ingredients (mayo, mustard, lemon juice) into bowl and stir till all combined.
8. Take your fresh dill and chop up and add to bowl with salt and pepper for taste. Give it one last stir.
9. Place into fridge till ready to serve.
10. Take a croissant and load a nice helping of chicken salad on top, Enjoy!!
