I love Pinterest. I get many of my ideas from here when it comes to my home, DIYs, event planning and some tasty recipes. Sometimes the ideas are misses but I have found many hits. With this recipe I made a couple changes but it’s definitely a tasty one I think you guys will enjoy. There is a new piece of kitchen equipment out called the Air Fryer. I LOVE it. There are many health benefits with using the air fryer but still having that yummy oil fried food taste. When using this piece of equipment over a true fryer you are getting a low fat meal, using the hot air circulation it cookes your ingredients from all angels without oil, and overall it cuts down on deep fried foods resulting in reduction in disease risk. This recipe I found didnt call for an air fryer but I think it would be a great addition. You can make this under 45 minutes. Let me know what you think!
Ingredients
4 chicken breast
a bag of sourdough nibbler pretzels
1/4 cup honey (I used Ben’s dad’s homemade honey so good!)
1/2 cup dijon mustard
1/2 cup extra virgin olive oil
2 tbsp red wine vinegar (you can use any mild vinegar you have on hand)
1/2 cup of mayonnaise (you don’t have to add this I did to make my honey mustard more creamy)
salt/pepper for taste
Air Fryer
blender or food processor
*Good side options for this dish. I made homemade green beans seasoned with butter and garlic salt and a fresh salad.
Step by Step
1. Get all your ingredients out. (Trick: If you don’t have an air fryer that’s ok you can still make this recipe. Just preheat your oven to 400 Degrees).
2. Take about 2 cups of your pretzels and pour into your blender or food processor (Trick: I use a vitmix because it really smooths your ingredient.) Pulse the pretzels for 20 seconds. You want some nice big chucks and some very fine pieces. Pour the pieces onto a plate. Rinse out your blender.
2. Next we are going to work on the honey mustard dressing. Pour in you blender honey, Dijon mustard, oil, vinegar , mayo, and some salt/pepper. You want to turn your blender to low and blend for about 30 seconds. Till it’s nice and creamy.
3. Take half of your honey mustard you just made and pour into a cup and set aside. You will use this later to pour over your fried chicken.
4. Take your chicken, place into a ziplock bag and pour the remaining dressing over the chicken. Let sit in the dressing for about 15 minutes in the fridge.
5. Once nice and chilled take your chicken out and set on the plate with pretzel crumbles. Press the pieces into the chicken. Flip over and do on the other side (Trick: make sure you got a nice thick coat over the chicken). Do this with each piece of chicken. 6. Take your chicken and place on the air fryer racks. Select chicken at temp of 380 and press start. It will cook for about 20 minutes . (Trick: if you are baking in oven place chicken on a pan and in the oven for 25 minutes at 400).
7. Once air fryer goes off take chicken out and take your left over dressing and drizzle it over the top of the chicken
8. Plate up your chicken and sides, Enjoy!
