I don't care what anyone says salad can be fun and delicious. You can add and take away to make it your own. You do have to watch what you add to a salad as it can rack up in calories fairly quickly. I found this salmon at Costco (I LOVE COSTCO) and I thought it would be fun to try a large salad with it. Cobb salads aren't the healthiest because there is so many different ingredients but they definitely are very tasty. Usually you have ham on it but I wanted to change it up. So Salmon it was.
Ingredients: Made this for 3 people
I pound of Salmon (found this one at Costco. Came with a dill butter spread)
3 avocados
4 hard boil eggs
3 hearts of Romaine lettuce
1 cup of blended cherry tomatoes
Half of red onion
1/2 cup of Gorgonzola crumbles
1/4 cup of cranberries
1/2 cup of crumble bacon
1/4 cup of glazed walnuts
your salad dressing of your choice (we used homemade ranch)
Step by Step
I followed the instructions on my Costco bought Salmon but if you can't find that you can use just a regular piece. You are going to want to preheat the oven to 400.
If you have a regular piece of salmon get out a piece of tin foil (large enough to wrap entire piece) and place your salmon on top. Pour some olive oil on top with some salt and pepper. Take 1 tbsp of butter put on top along with some sliced lemons. Wrap up the salmon.
Place your salmon in oven for 20 minutes. If you have a piece larger then a pound you will need to cook longer.
To check to make sure salmon is done it should flack apart.
While your salmon is now cooking wash and cut your romaine lettuce. This is a cobb salad so you want your lettuce to be cut in stripes.
Next, cut your cherry tomatoes in half, your avocados & hard boil eggs into long pieces, and your red onion into long thin slivers.
Your Salmon should now be done. Take two forks and pull the salmon apart.
Time to assemble. This part you can have fun with. Take out a large bowl. Place your lettuce in the bowl and then build from there. If you go to my Instagram you can see how I built ours.
