Spicy garlic shrimp with asparagus medley



I have noticed that people tend to go out a lot because they want a good delicious dinner. Well I got the recipe for you and this one is made in under 30 minutes. This is made for 4 people and it sure will become a family favorite.


Ingredients

Spicy Shrimp

  • 1 1/2 lb. large raw shrimp peeled and deveined

  • 1/4 cup melted butter (or olive oil)

  • 1 teaspoon coarse kosher salt

  • 1/4 teaspoon black pepper

  • 1 teaspoon garlic powder

  • 1/2 teaspoon crushed red pepper or paprika

  • 1/4 cup grated Parmesan cheese

Asparagus Medley

  • 1 lb asparagus, woody ends trimmed

  • 1 cup heirloom cherry tomatoes, halved

  • 8 ounce mozzarella balls (I buy the big tub from Costco)

  • 2 tablespoons fresh basil leaves, minced

  • 2 tablespoons fresh parsley, minced

  • 1 tablespoon lemon zest

  • 1 clove garlic, minced

  • 2 teaspoons lemon juice

  • 2 tablespoons olive oil

  • salt and ground black pepper

Step by Step: Spicy Shrimp

  1. Preheat your oven to 400 degrees.

  2. Arrange the shrimp in a single layer in a deep oven pan. Need to make sure the shrimp isn't stacked on top of each other. You want a single layer.

  3. Pour the melted butter on top of the shrimp and toss to coat.

  4. Sprinkle the shrimp with the kosher salt, black pepper, garlic powder, crushed red pepper and Parmesan.

  5. Bake until the shrimp are pink and opaque, about 8 minutes. If you want the Parmesan to brown, finish by broiling for about 1 minute.

  6. Transfer the baked shrimp to a serving platter and spoon the pan juices on top and serve. Enjoy!

Step by Step: Asparagus Medley

  1. When you put your shrimp in the oven is when you need to put your asparagus in. Get out a sheet pan. Spray with cooking oil. Add asparagus to pan and season with a little bit of olive oil, salt, pepper, and garlic salt (TRICK: garlic salt is by choice). Cook for 8 minutes (Trick: if you have thick asparagus you may need to go longer. You want them not to be hard but not flimsy)

  2. While asparagus is cooking, make your toppings by combining the basil, parsley, lemon zest, and garlic, halved tomatoes, and mozzarella balls in a small bowl. Set aside.

  3. Your shrimp and asparagus now should be done.

  4. Take your mixed toppings and pour it over the top of your asparagus. Place back into the oven for 5 minutes.

  5. Once done take out and drizzle with olive oil and lemon juice.

  6. Sprinkle a little salt and black pepper for taste and Enjoy!
