Summer Raspberry Sorbet



On a hot summer day aren't you craving something sweet and refreshing? You are trying to be good and not cheat on your diet so you can't have the usual ice cream or slushie. Which I know we all love during the summer. I have the biggest sweet tooth when I am on a diet. It's the hardest thing not to cave in when the weather is beautiful outside like it was this weekend. I found this recipe on Instagram posted by @howtofoodprep. Which if you don't follow them I would as they have a lot of great tips and recipes. I get a lot of my ideas from them. This partially post had 5 different recipes on how to make this sorbet so if you aren't a fan of raspberries, I recommend trying out the other favors. This recipe helps crave that sweet tooth for sure and so easy to make.


Ingredients

  • 3 cups raspberries

  • 2 tbsp raw honey

  • 2 tbsp water plus more as needed

  • 1 medium lemon

Step by step

  1. Take your raspberries and freeze for 4 hours. (Trick: make sure you wash them and place directly into a gallon size Ziplock bag. You want them still wet and place into freezer. By keeping them a little wet you are creating ice for when you blend up fruit later.)

  2. After 4 hours take your 3 cups of frozen raspberries and place into a blender or food processor. (Trick: if you do a blender make sure the blender is powerful enough to really blend up fruit.)

  3. Next, add in your 2 tbsp of raw honey (I was lucky and had real honey from Ben’s dad who makes his own. You can taste the different with fresh honey.)

  4. You then want to cut your lemon in half and squeeze half over your raspberries.

  5. After the lemon juice is added in the blender or food processor pulse the ingredients together. You should see the raspberries break down into small pieces. Do that a couple times until all fruit is broken down.

  6. Once you have pulsed fruit about 5 to 8 times you will then want to add in your 2 tbsp of water and the rest of your lemon juice into the mixture. Take a spatula and scrap down all sides.

  7. Blend mixture until it’s nice and creamy. (Trick: if you notice that it’s not getting creamy add a little bit of water.)

  8. Get out a bowl and spoon. Scoop out a nice helping and Enjoy!!
