Weekend Get Away

Happy Memorial Day weekend everyone!! Nice to have a weekend to just relax and enjoy the outdoors (if the rain holds off.) It’s sad this year is a little different because COVID and people had to put their vacation plans on hold but that doesn’t mean we can’t have a fun weekend. My husband, Emily, Rachel, Dylan, and one of our best friends Jeni did decide to go out of town to celebrate Rachel's birthday and this holiday weekend. We traveled to Charleston one of my favorite towns ever. I actually had my bachelorette party here last October! I know alot of people are probably going to be mad that we did travel during all of this but the state is no longer in lock down and we wanted to support the hotel industry and small restaurants here. We are going to be careful and keep our distance from everyone but honestly I needed a weekend get away. If you aren't planning on traveling and you are just going to spend this weekend on lake or just around the house this fruit tray is sure to bring some life to any get together. Super simple, easy, and cheap. I made this to keep out for the hotel as we are staying at Charleston's Homewood suites by Hilton and we have a small kitchen and large fridge. I do have to say hotel employees are very excited to see people traveling again and being back to work. Definitely felt very welcome when we walked here. So here's to an exciting weekend cant wait to share some hot restaurant spots around town for you guys. Enjoy your weekend!!!

Ingredients

  • a variety of fruits (I used Strawberries, blackberries, watermelon, mango, oranges, apples, and grapes)

  • brownie batter hummas (I got this one from aldi)

  • Yogurt covered pretzels (these are from Publix)

  • serving tray

FOR FRUIT DIP

  • 1/4 cup heavy whipping cream

  • 1/4 tsp vanilla extract

  • 8 oz of cream cheese

  • 3/4 cup powdered sugar

Step by Step

  1. Get out a serving tray for all your fruit and dips to go on. (I believe I got this one from Kirklands last year).

  2. Wash and cut up all your fruit into bite size pieces. I kind of did different shapes and sizes for a different look.

  3. Take two small bowls and place on your tray were you think would look good to build the fruit around.

  4. For your fruit dip take out a mixer and add cream cheese and whip until it's nice and creamy. Add your wet ingredients 1st mix well. Then add in your sugar alittle at a time.

  5. Add this dip and your brownie dip into the bowls

  6. Add your fruit and pretzels around the bowls until you have a full tray. (Trick: you can add different types of nuts around for the salty lovers. I forgot mine at home.)

  7. Add some mint for a garnish and Enjoy!
