Zucchini Meatball Boats






LOW CARB DAY! Even if you aren't following a diet plan it's nice to have a low carb day. Maybe you need this after a long weekend of eating bad or you just ate bad that day. This meal is for you and super delicious. My husband loved this. Guy friendly to say the least. Zucchini's late are used so many ways. In this recipe I used it as like a bread bowl. This is made in under an hour. You can make this for larger families, but I made for 4.




Ingredients

  • 2 medium zucchinis

  • 1 tbsp. extra-virgin olive oil

  • Kosher salt

  • Freshly ground black pepper

  • 32 oz bag of frozen Italian style meatballs

  • 1 tbsp freshly chopped parsley

  • 1/2 tsp. crushed red pepper flakes

  • 1/2 tbsp of Italian seasoning

  • 2 c. marinara sauce

  • 1 c. shredded mozzarella

  • 1/2 c. freshly grated Parmesan

Step by Step

  1. First you need to read on the back of your frozen meatballs on what temp you need to preheat your oven. Put meatballs on tray and put into oven for the amount of time bag says.

  2. Next, cut your zucchini in half and scoop out about half of the insides. Place halves into a deep baking dish drizzle with olive oil, and season with Italian seasoning, garlic powder, salt, and pepper. Bake 12 to 15 minutes, until mostly tender. Remove from oven.

  3. Your meatballs should now be done also. Remove from oven. Put into bowl and pour marinara sauce over the top. Mix together.

  4. Turn broiler to high.

  5. Fill zucchini boats with meatballs with marinara and top with mozzarella and some red pepper flakes, salt, and pepper. Broil until cheese is melty, 3 to 5 minutes (watch very closely so it doesn't burn). Garnish with Parmesan and parsley and serve hot. Enjoy!
