Life is just so much easier when you just chill out. Nothing can chill you out better than a refreshing cocktail. One of my favorite childhood popsicle was an orange creamsicle. There was just something about the crisp outside and creamy ice cream center. If you are like me and enjoy a creamsicle you will LOVE this cocktail. It’s the perfect mixture of a freshening mimosas with velvety ice cream. Super easy to make and minimal ingredients. Hope you enjoy!
Ingredients
one 25 ml bottle of champagne (Trick: my favorite is Lamarca Prosecco. It’s refreshing and doesn’t leave that bitter taste in the back of your throat like a lot of champagne will do. Bottle runs around $16.99)
one 52 oz jug of orange juice
smallest bottle of whipping cream your grocery store carries
a small bottle of honey
one sleeve of graham crackers
a cocktail shaker glass
Step by Step
1. Get you champagne flutes out, this recipe makes two.
2. Put your sleeve of graham crackers in a sandwich ziplock bag. Close tightly and smash graham crackers into tiny pieces (Trick: I use a meat mallet; the flat side). Once smashed place pieces in a bowl.
3. Squeeze your honey into another bowl. Dip your champagne flute into the honey where the rim is just getting submerged. (Trick: you don’t want a ton of honey on the rim as it will drip down the side of the glass).
4. Dip the glass into your graham cracker mixture.
5. Fill your cocktail shaker with ice. Pour orange juice into shaker till half full along with a tablespoon of heavy whipping cream. Top the rest with champagne. close tightly and shake very well for about 30 seconds.
6. Once well shaken pour the mixture into your champagne flutes. You only want to pour half the mixture into each glass. For the remaining of the glass top with champagne. Be careful as it will fizz.
7. Drink up, Enjoy!
